Vegan Mediterranean Plate 🔥

Crispy spiced tofu, creamy silken tofu lemon-garlic spread, & cucumber-tomato salad

This vegan Mediterranean plate is so ridiculously satisfying and delicious. I often try Mediterranean food and think, “I could eat this everyday.” This dish epitomizes that feeling. The savory tofu spice with warm cumin and cinnamon is a dream. The cucumber-tomato salad is light and refreshing. The silken tofu lemon-garlic spread is rich, creamy, tangy, and just straight up divine. And when served over couscous with pita on the side, you’re all set. Super happy with how this one turned out. Let’s get into it:

FULL RECIPE

crispy spiced tofu ingredients

1 block super firm tofu (Wildwood organic; 16oz), drained, dried, and grated

3 tbsp soy sauce

4-6 tbsp olive oil

1/4 tsp kosher salt

black pepper to taste (I did 50-60 grinds)

3 garlic cloves, minced (17g)

1 jalapeño, de-seeded and finely diced (9g)

2 tsp cumin

1 1/2 tsp paprika

1/4 tsp cinnamon

lemon garlic spread ingredients

16oz silken tofu

3/4 cup cashews

1 lemon, juiced

1 garlic clove (4g weight), grated

1 tbsp nutritional yeast

3/4 tsp kosher salt

cucumber-tomato salad ingredients

1/2 small red onion, finely diced

1 persian cucumber, finely diced

1 medium tomato, finely diced

1 handful cilantro, roughly chopped

16 chives, finely chopped

1/2 lemon, juiced

1/2 tsp salt

cooked couscous (I made one dried cup’s worth)

pita on the side for dipping

preparation

preheat an oven to 450F. add all your crispy spiced tofu ingredients to large mixing bowl and use a spatula to combine so that everything is evenly covered. spread tofu out on a large roasting tray and pop into the oven to roast for 30 minutes (NOTE: you can do a lower temp like 400F-425F if you fear the tofu may over cook). make sure to turn the tray about 15-20 minutes through.

get your couscous going on the stove at the this point.

while the tofu and couscous finish, add your cucumber-salad ingredients to a separate mixing bowl and use a spatula to combine. place all your lemon-garlic spread ingredients in a blender and blitz until creamy.

add some of the lemon-garlic spread on the bottom of a plate, followed by the couscous, crispy tofu, and the cucumber-tomato salad. optionally serve with pita on the side. dig in and enjoy, my friends 🙏
