The BLT is undoubtedly one of the best sandwiches out there. This version with smoky tofu “bacon” and creamy avocado makes for a very satisfying meal. The recipe is very straightforward. Let’s get right into it:

ingredients
1 block extra firm tofu, pressed then cut into 1/2-inch thick slices
1/4 cup maple syrup
1 tablespoon harissa paste
1 teaspoon smoked paprika
4 tablespoons olive oil
1/2 teaspoon salt
lettuce, tomato, avocado, vegan mayo, and sourdough bread
preparation
preheat an oven to 375F. lay your tofu out on a baking tray with either parchment or an elevated rack. mix the maple syrup, harissa, smoked paprika, olive oil, and salt together in a separate bowl, then brush over both sides of all the tofu slices. roast in the oven 20 minutes, take out, flip each piece, brush with more marinade, then rotate the tray and back into the oven for another 15-20 minutes. layer between two slices of toasted sourdough bread with the vegan mayo, lettuce, tomato, and avocado. dig in and enjoy 🙏
