Experimenting with tofu is something that comes naturally to me. I’ve tried so many approaches at this point, some of which have failed miserably! But one of the most tried and true ways for easy and delicious tofu prep is to simply break it into craggy bits, season with soy sauce and spices, and roast at a high temp in the oven until beautifully golden brown. No frills. No stirring in a pan or shredding with a grater. No chopping with a knife or shaving with a vegetable peeler. The easiest of all methods for effectively tasty tofu. And layered on a bun with spicy-tangy special sauce, lettuce, tomato, and red onion, you’re set for a real treat. Let’s get into it:
FULL RECIPE
tofu ingredients
1 block extra firm tofu, pressed and broken into craggy pieces
3 tablespoons soy sauce
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 tablespoon nutritional yeast
black pepper to taste
1/4 cup olive oil
special sauce ingredients
3/4 cup vegan mayo
3 tbsp ketchup
2 tbsp mustard
1 tsp garlic powder
2 tbsp pickled jalapeños
mix in a bowl until combined
other ingredients
1 red onion, thinly sliced
1 tomato, thinly sliced
1/2 head iceberg lettuce, finely sliced
burger buns, toasted
preparation
pre-heat an oven to 450F. add your tofu to a large mixing bowl with the soy sauce and remaining tofu ingredients. mix together with a spatula to evenly coat the tofu in oil and spices. evenly space out the tofu on a baking tray with either parchment or an elevated rack. place in the oven to roast about 30-35 minutes, turning halfway through. start checking your tofu at abbot 20 minutes in to make sure it isn’t burning, as oven temps vary widely.
while to tofu is roasting, mix together your special sauce ingredients in a small bowl and set aside. prep all your veggie fixings and toast the burger buns.
once ready, layer the atop bottom bun in the order of special sauce, lettuce, a handful of tofu, tomato, red onion, and top bun (with more special sauce). dig in and enjoy, my friends 🙏
