I get so many messages and comments from folks asking how to thinly slice tofu. There are two keys: 1) SUPER FIRM tofu. Extra firm and regular firm will not cut it, literally. 2) Use a mandolin! This makes it a lot easier the the slices will be consistent. ALSO - don’t fret over the tofu breaking into smaller pieces!! In the end, all the slices will have an even sear and, together with everything in a sandwich, you won’t even notice that the pieces are broken up. Let’s get into this!
FULL RECIPE
ingredients
1 block super firm tofu, drained and dried, then thinly sliced with a mandolin
salt and oil as specified in the preparation instructions
2 teaspoons smoked paprika
2 teaspoons garlic powder
2 teaspoons nutritional yeast
preparation
heat a non-stick pan over medium heat and allow to warm up 2 to 3 minutes. add about 2 tablespoons cooking oil to the pan and allow to come up to temp about 10 seconds. layer in half of the tofu slices, then season with half the spices and stir around. allow to cook in the pan 2 to 3 minutes. layer in the remaining slices and add the remaining seasonings. stir together to combine everything and continue to sear the tofu for another 6 to 8 minutes, or longer for desired color and texture. be sure to stir the tofu every couple minutes to ensure even browning. add to your favorite sandwich or plate and dig in!
