Here’s another fun stop motion recipe, this time for vegan sushi! This version with crispy tofu and 6 different fresh veggies makes for a delightfully tasty bite. And with all that fresh produce and rice, it’s super filling! Let’s get into it:

ingredients
nori sheets
1 cup cooked sushi rice
1 block extra firm tofu, shredded with a grater
4 to 6 tbsp neutral cooking oil like avocado or grapeseed
1 tsp salt
1/2 tsp black pepper
1 tbsp paprika
1 tsp mushroom seasoning
1 carrot, thinly sliced
1 cucumber, thinly sliced
1 red bell pepper, thinly sliced
1 jalapeño, thinly sliced
1/4 head purple cabbage, thinly sliced
1 avocado, thinly sliced
soy sauce and wasabi for serving
optionally add sriracha mayo or other toppings for added flavor and texture
preparation
preheat an oven to 400. add shredded tofu, oil, salt, black pepper, paprika, and mushroom seasoning to a large baking tray lined with parchment. mix to combine, flatten into a sheet that has no large holes or gaps, then roast for 30 mins. once finishing, take out, cool 10 mins, then tofu sheet up into a cylinder and shop into fine shreds with a sharp knife.
add cooked sushi rice to your nori sheet so that it covers most of the sheet with a 1/4-inch layer. add tofu in the middle of the rice on the nori. surround the tofu toward the center with the remaining ingredients including carrot, cucumber, bell pepper, jalapeño, purple cabbage, and avocado. I’d tell you how exactly to roll sushi but this is IG and I don’t have lots of space. just check out some YouTube videos, that’s how I did it!
wrap it up, cut into piece, and serve with soy sauce and wasabi 🙏
