Whether grilling, roasting, or pan searing, skewers make life a lot easier, and they’re fun to eat! Tofu is one of my favorite foods to use with skewers, and in this recipe, we’re throwing together a delicious marinade with the help of unsweetened plain cashew milk yogurt. Once prepped, the skewers roast in the oven, providing plenty of time to make the quick lemon-tahini yogurt sauce. These are great on pita with fresh veggies, but can also be served family style with sauce on the side. Let’s get into it:

1 cup plus 1/2 cup unsweetened plain cashew milk yogurt (I used Forager brand)
2 lemons, 1 zested and juiced, and the other simply juiced
