With its affinity for ingredients like mirepoix, sage, and rosemary, sweet potatoes are often thought of for recipes in the fall and winter. But not anymore! Take a sweet potato, roast it, mash it in the skin, top with cooked plant-based ground meat, fresh pico, and avocado, then finish with chipotle mayo. What do you get??
