Vegan Sheet-Pan Kofta 🌯

A dish that tastes just as good as it looks

This dish is inspired by Zach Neman’s innovative skewer-less sheet pan version of kofta, a recipe that has since blown up on social media. It’s basically a kebab in a lavash wrap with some form of salad and savory/spicy sauce. I’ve seen a number of takes, include a few vegan versions, so wanted to throw my hat in the ring. This is the kind of meal you make for your non-vegan family and friends to show them you can achieve flavors and textures identical to those in animal-based foods, but, of course, without the harm. In this version we combine aromatics, fresh herbs, and zesty spices with plant-based ground, form into keftas of a sheet tray to bake in the oven, whip up a cucumber salad, then throw everything together in lavash wraps with a harissa vegan aioli. And for added crunch we brush harissa paste over the wraps and toast in a pan until crispy and golden on all side.
